Spicy Thai Pork (Larb)
Ingredients
- 1 pound(s) uncooked ground pork
- 4 medium uncooked shallot(s), peeled, minced
- 1/4 medium red bell pepper, minced
- 2 Tbsp fresh lime juice, divided
- 1 Tbsp fish sauce
- 1 tsp chili sauce, hot Asian-style, or to taste
- 1/4 cup(s) cilantro, leaves, fresh, coarsely chopped
- 1 cup brown rice (cooked aldente)
- 12 leaf/leaves boston lettuce
Directions
- Heat a large nonstick skillet over medium-high heat. Brown the pork.
- When only a little pink is left add shallots, red bell pepper, lime juice, fish sauce and chili sauce. Stir well and continue to cook 5-6 min.
- Add the brown rice and cilantro, stir to combine.
- To serve, place 2 or 3 lettuce leaves on a plate; divide about 3/4 cup of pork mixture over top.
