    Ingredients

    • 1 pound(s) uncooked ground pork
    • 4 medium uncooked shallot(s), peeled, minced
    • 1/4 medium red bell pepper, minced
    • 2 Tbsp fresh lime juice, divided
    • 1 Tbsp fish sauce
    • 1 tsp chili sauce, hot Asian-style, or to taste
    • 1/4 cup(s) cilantro, leaves, fresh, coarsely chopped
    • 1 cup brown rice (cooked aldente)
    • 12 leaf/leaves boston lettuce

    Directions

    1. Heat a large nonstick skillet over medium-high heat. Brown the pork.
    2. When only a little pink is left add shallots, red bell pepper, lime juice, fish sauce and chili sauce. Stir well and continue to cook 5-6 min.
    3. Add the brown rice and cilantro, stir to combine.
    4. To serve, place 2 or 3 lettuce leaves on a plate; divide about 3/4 cup of pork mixture over top.
