  • Spicy Shrimp With Pineapple And Bok Choy

    Ingredients

    • 3 Tbsp. soy sauce
    • 2 Tbsp. unseasoned rice vinegar
    • 1 Tbsp. honey
    • 1 Tbsp. cornstarch
    • 2 tsp oriental sesame oil
    • 4 tsp vegetable oil
    • 1 lb uncooked large shrimp peeled, deveined
    • 4 lrg garlic cloves finely minced
    • 1 1/2 Tbsp. finely-minced peeled fresh ginger
    • 1/4 tsp dry crushed red pepper
    • 1 lrg red bell pepper sliced
    • 6 x baby bok choy trimmed, and
    •     cut crosswise into 1/2"-wide strips
    • 1 1/2 c. fresh peeled pineapple in 3/4" cubes
    • 6 x green onions thinly sliced

    Directions

    1. Blend first 5 ingredients in small bowl.
    2. Heat wok or possibly large nonstick skillet over medium-high heat 1 minute. Add in 2 tsp. vegetable oil; tilt to coat. Add in shrimp, garlic, ginger, and crushed pepper. Stir-fry 2 min; transfer mix to bowl.
    3. Add in 2 tsp. vegetable oil to same wok or possibly skillet. Add in bell pepper; stir-fry 2 min. Add in bok choy and stir till wilted, about 1 minute. Add in pineapple, onions, and shrimp mix. Stir-fry till shrimp are just opaque in center, about 2 min. Stir soy mix and add in; cook till juices thicken, about 1 minute.
    4. This recipe yields 4 servings.
    5. Comments: Serve with white rice to soak up the juices. A bottle of Gewurztraminer would pair nicely with the spiciness of the shrimp.
