Spicy Paprika Shrimp Wraps

- 1/2 lb peeled and deveined raw shrimp
- 4 whole wheat 10" tortilla wraps
- 1 tsp hot smoked paprika
- 1 tsp Italian seasoning blend
- 4 large lettuce leaves
- 1 tbs mayonaise
- 1/4 cucumber, peeled into long strips with a vegetable peeler
- 1 tsp olive oil
- salt & pepper to taste
Directions
- In a large saute pan heat the oil and add the paprika and seasoning blend.
- Add the shrimp and saute until the shrimp is almost done.
- Salt & pepper to taste and taste for seasoning.
- Remove from the heat.
- Gently warm the wraps in the microwave.
- On each wrap add 1 lettuce leaf, followed by 1/4 tbs of the mayonaise.
- Place 1/4 shrimp mix on the mayonaise.
- (If your shrimp are on the large side use only what you need without overfilling the wrap.)
- Top the shrimp with 1/4 of the cucumber slices.
- Carefully fold in each side and roll the wrap like a burrito.
- These are good served warm, but taste very nice at room temperature for lunch.
