Spicy Grilled Shrimp And Scallops With Grand Marnier
Ingredients
- 1/2 c. soy sauce
- 1/4 c. Grand Marnier
- 2 Tbsp. honey
- 1 Tbsp. ginger, minced
- 1 tsp warm chili pepper, minced
- 1/4 c. orange, juice, with pulp
- 1/2 c. coriander, finely, minced
- 12 x jumbo shrimp
- 12 lrg scallops
- 1 x orange, cut in wedges
- 4 x bamboo skewers
- 2 x lime, cut in wedges
Directions
- Combine soya sauce, Grand Marnier, honey, ginger, warm peppers, orange juice, 1/2 the coriander. Reserve 1/4 c. of marinade for basting.
- Place shrimp and scallops in marinade for 30 min. Skewer shrimp and scallops, alternating between wedges of orange and lime.
- Grill for 5 min or possibly till shrimp turns pink and scallops turn completely white. Baste with reserved marinade while grilling.
- Sprinkle with minced coriander and serve with basmati rice and roasted red peppers.
