Spicy cucumber salad

- 3/4 cup fresh lime juice about 6-12 limes
- 1/4 cup sugar
- 2 tbsp salt
- 1 tbsp hot sauce
- 1 tbsp fish sauce
- 1 small red onion thinly sliced
- 1 1/2 lbs cucumbers peeled seeded and slided
- 1 tbsp chopped fresh mint
- 1 tbsp cilantro or parsley
Directions
- at least two hours prior to serving combine the lime juice, sugar, salt hot sauce fish sauce in a small bowl. Add the red onion and mix well Refrigerate for at least 2 hours or overnight
- Lift the onions out of the dressing and combine them with the cucumber, mint and cilantro/parsley in meidum bowl. spoon a few tbsp of dressing, mix and season to taste with more dressing, salt or hot sauce. reserve the remaining dressing.
