Spicy Coconut Cod
A Quick Spicy Entree Ingredients
- 2 lb. cod fillets
- 1 cup coconut milk, canned
- 2 Tbsp. sirachha sauce
- 1/2 tsp. thyme
- 1 Tbsp. onions
- 1 Tbsp. cilantro
- 1 Tbsp. Chipotle seasoning
- 2 Tbsp. Unsweetened Coconut Flakes
Directions
- Defrost cod fillets if frozen and lay out in a large baking dish.
- Sprinkle the onions evenly over the cod.
- Shake the can of coconut milk well and pour into a mixing bowl.
- Add the sirachha sauce, thyme, chipotle seasoning and blend well.
- Pour over the cod and onions.
- Bake in a 350 degree oven for 15 minutes.
- Sprinkle the coconut evenly over the top and bake for an additional 5 minutes.
- Serve hot with plain rice or potatoes.
