Spicy Chicken with mushrooms, youngcorn &peas with Hoisin sauce

- 1 kilo Chicken, cutlets
- 1 cup sliced mushrooms
- 1 cup Youngcorn, sliced
- 1/2 cup green peas
- 1 med red and green bell pepper, cut into squares
- 2 tsp Paprika
- 1 finger chili julliened, for garnish
- 1 med onion, sliced
- 2 cloves garlic, minced
- 1 tbsp hoisin sauce
- salt and pepper to taste
- 1/4 cup chicken broth
- 1 tsp Olive oil
Directions
- Marinade chicken in hoisin sauce and pepper overnight.
- Saute onion, garlic and chicken, stir fry for a couple of minutes.
- Add mushrooms and 1/4 cup chicken stock. Let it simmer on low heat.
- Add the peas and young corn and continue to simmer while stirring occasionally.
- Let the juices thicken. Add the bellpeppers and paprika. Stir.
- Transfer onto a serving dish,
- Drizzle with olive oil and serve.
