  • Spicy Chicken with mushrooms, youngcorn &peas with Hoisin sauce

    A spicy yet tasty chicken recipe with vegetables in it. This is a very sumptuous recipe that I experimented with Hoisin sauce.

    Ingredients

    • 1 kilo Chicken, cutlets
    • 1 cup sliced mushrooms
    • 1 cup Youngcorn, sliced
    • 1/2 cup green peas
    • 1 med red and green bell pepper, cut into squares
    • 2 tsp Paprika
    • 1 finger chili julliened, for garnish
    • 1 med onion, sliced
    • 2 cloves garlic, minced
    • 1 tbsp hoisin sauce
    • salt and pepper to taste
    • 1/4 cup chicken broth
    • 1 tsp Olive oil

    Directions

    1. Marinade chicken in hoisin sauce and pepper overnight.
    2. Saute onion, garlic and chicken, stir fry for a couple of minutes.
    3. Add mushrooms and 1/4 cup chicken stock. Let it simmer on low heat.
    4. Add the peas and young corn and continue to simmer while stirring occasionally.
    5. Let the juices thicken. Add the bellpeppers and paprika. Stir.
    6. Transfer onto a serving dish,
    7. Drizzle with olive oil and serve.
