Spicy Boiled Shrimp With Creamy Avocado Sauce
Ingredients
- 2 lb Medium-size shrimp in shells
- 1 Tbsp. Seafood seasoning
- 1 x Lemon thinly sliced
- 12 ounce Beer - (1 can)
- 1/2 c. Lightly packed cilantro leaves
- 1/4 c. Lightly packed flat-leaf parsley leaves
- 2 Tbsp. Extra virgin extra virgin olive oil
- 3 Tbsp. Lime juice
- 1 x Avocado
- 1/4 c. Mayonnaise
- Warm pepper sauce to taste
- Salt to taste
- Black pepper, freshly grnd to taste
Directions
- Rinse shrimp; set aside. Add in seasoning, lemon slices, and beer to about 1 qt of water in a Dutch oven. Bring to a boil, add in shrimp and cook 1 minute. Drain and rinse with cool water. Place in a large plastic bag, seal, and chill. Keep chilled till served. Make sauce and chill. Peel shrimp as you eat them.
- For the sauce: Add in cilantro, Parsley, extra virgin olive oil, and lime juice to a blender or possibly food processor fitted with the metal blade. Process till almost pureed. Peel and pit avocado; add in to blender or possibly processor. Process till smooth. Add in mayonnaise; process just to blend. Pour into a bowl; season with warm pepper sauce, salt, and pepper. Cover and chill. Keep chilled till served.
