  • Spicy Boiled Shrimp With Creamy Avocado Sauce

    Ingredients

    • 2 lb Medium-size shrimp in shells
    • 1 Tbsp. Seafood seasoning
    • 1 x Lemon thinly sliced
    • 12 ounce Beer - (1 can)
    • 1/2 c. Lightly packed cilantro leaves
    • 1/4 c. Lightly packed flat-leaf parsley leaves
    • 2 Tbsp. Extra virgin extra virgin olive oil
    • 3 Tbsp. Lime juice
    • 1 x Avocado
    • 1/4 c. Mayonnaise
    •     Warm pepper sauce to taste
    •     Salt to taste
    •     Black pepper, freshly grnd to taste

    Directions

    1. Rinse shrimp; set aside. Add in seasoning, lemon slices, and beer to about 1 qt of water in a Dutch oven. Bring to a boil, add in shrimp and cook 1 minute. Drain and rinse with cool water. Place in a large plastic bag, seal, and chill. Keep chilled till served. Make sauce and chill. Peel shrimp as you eat them.
    2. For the sauce: Add in cilantro, Parsley, extra virgin olive oil, and lime juice to a blender or possibly food processor fitted with the metal blade. Process till almost pureed. Peel and pit avocado; add in to blender or possibly processor. Process till smooth. Add in mayonnaise; process just to blend. Pour into a bowl; season with warm pepper sauce, salt, and pepper. Cover and chill. Keep chilled till served.
    3. This recipe serves 4 to 6.
