I feel like I am cooking from everyone else’s blogs lately, but I can’t help it! There’s so much great stuff people are posting! I got this recipe from Kika’s blog, The Wandering Cook. It was so simple, for one thing. I threw it together as a quick side for dinner for Matthew and myself last night. It’s fast, easy, and oh-so-delicious! I love, love, love avocados, so if I don’t cook anything else summery before fall fever takes over, I am glad I made this! Although Kika’s recipe calls for 1 avocado, since I was feeding the both of us, I grabbed 2 of them. 1 for each of us. Matthew and I both enjoyed this!

    Ingredients

    • Ingredients:
    • 1 avocado
    • Juice of one lemon
    • 1 tablespoon of extra virgin olive oil
    • Salt and pepper, to taste
    • Red pepper flakes, to taste

    Directions

    1. 1. Whisk lemon juice, oil, salt, pepper and red pepper flakes in a small bowl.
    2. 2. Cut the avocado in a half, remove the pit and cut flesh in chunks, without removing it from the shell.
    3. 3. Immediately pour dressing over avocado and serve.
