    Why go out to eat,when you can make this delightful healthy Vegetable Shrimp Fried Rice At Home ,In a Skillet or in A Wok,in under thirty minutes.Make your own fortune cookies,put on a movie..and enjoy the evening...Don't forget the Popcorn for later..

    Ingredients

    • 1/12 cups cooked cold rice -
    • 1/12 lbs Shrimp ,uncooked tails removed salt and peppered
    • 1cup chopped onion
    • 1piece of finely chopped garlic
    • 1/2 cup of green onions diced
    • 1 very small piece of fresh ginger grated
    • 4-6 tbls soy sauce
    • 4 tbls veg.oil
    • Veggies all chopped small,mushroom.broccoli ,water chestnuts,and frozen baby peas
    • 2 eggs beaten lightly for the omellete

    Directions

    1. In a large heavy skillet or wok,add 2tsps oilwhen very hot add onions,garlic and ginger.add veggies and cook till soft but still crunchy.add very cold rice slowly ,constantly stirring.add shrimp,last,add green onions,and soy sauce keep stirring till mixed well about 5 minutes.in a clean skillet heat 2 tbls of oil add beaten egg,tilting the pan,flip over ,cook well on the other side ,cut into strips and add to the top of rice when serving..
