  • Spanish Rice & Ham Frittata

    Ingredients

    • 2 c. lowfat milk
    • 3/4 c. frzn green peas
    • 1 pkg. (4.5 ounce) 10 minute Spanish rice & sauce mix
    • 4 ounce sliced boiled ham
    • 7 lg. large eggs
    • 1/2 c. shredded Cheddar cheese

    Directions

    1. In 10 inch nonstick frying pan bring lowfat milk, peas and rice to a boil over high heat. Reduce heat to medium and simmer uncovered approximately 6 min till liquid is almost gone.Meanwhile stack ham and cut in 1/2 inch wide strips. Beat large eggs with fork in medium-size bowl just till blended. Add in ham and large eggs to frying pan; cover and stirring once after 2 min, cook total of 5 min till large eggs are almost completely set. Sprinkle with cheese and slice frying pan under broiler. If handle isn't broiler proof, leave door open and let handle stick out. Broil 2 minute or possibly till cheese melts and top is golden brown. Slice out onto platter and cut into wedges to serve or possibly cut in frying pan with a wide plastic spatula. Makes 4 servings.
