  • Spanish Rice and Mexican Seasoning Blend

    Ingredients

    • 2 T ground cumin
    • 2 T ground chili powder
    • 2 T ground smokey paprika
    • 2 T dried oregano
    • 1 T garlic powder
    • 2 t cayenne powder
    • Mix all seasonings together
    • Store in air-tight container
    • Molé Sauce
    • I have never made Molé sauce from scratch but it's definitely on my "to do" list.
    • Until then, my favorite brand of jarred Molé sauce is: Doña María
    • For a refreshing treat, try a Jarritos Mexican Soda~
    • Flavors are: Mango, Pineapple, Fruit Punch, Guava, Lime, Mandarin,
    • Strawberry, Tamarind, Grapefruit, Mexican Cola, Jamaica.
    • Any flavor will go well with your Cinco de Mayo Dinner~
    • Spanish Rice~
    • 2 cups long grain white rice
    • 1/4 cup vegetable oil
    • 1/2 cup yellow onion, chopped
    • 1/2 green bell pepper, chopped
    • 1/2 red bell pepper, chopped
    • 2 cloves garlic, chopped
    • 3/4 cup tomato sauce
    • 2 t sea salt
    • 2 3/4 cups chicken broth
    • Heat oil in a 12-inch skillet
    • over medium-high heat
    • Add rice
    • Saute' rice until golden brown
    • about 10-15 minutes
    • Add onion and peppers
    • Saute' another 5-10 minutes
    • Add minced garlic

    Directions

    Mexican Seasoning Blend, Molé Sauce, Spanish Rice and

    Mexican Soda~

    Now you can make your own

    Mexican Seasoning Blend~

    Saute' 3 minutes

    Add tomato sauce, chicken broth and salt.

    Stir

    Turn heat up to high

    Bring mixture to a full boil

    Boil 2 minutes

    Reduce heat to low

    Cover tightly

    Simmer 20 minutes

    Turn off heat

    Let rice stand 5 minutes

    Fluff with fork

    Serve
