Soya Chunks Biryani

Soya chunks are easily available in Indian grocery stores and needs to be pre-soaked in order to get its soft texture. This recipe could also be modified to fried rice and the masala shud be increased with some water to give gravy. Ingredients
- 30 pieces of soya chunks
- 1/2 carrot - chopped
- Palm size green peas
- 1 1/2 tsp cumin seeds
- 1 tbsp ginger & garlic paste
- 1 onion - chopped
- 1 1/2 or 2 tomatoes - chopped
- 3 green chilies - chopped (or 2 if don't like it too spicy)
- 1 cinnamon stick
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 1 tsp red chilli powder
- 3 tbsp ghee to fry
- 2 cups Basmati rice - soaked for 30 minutes and drained
- Coriander leaves - garnishing
- Salt to taste
- Optional:
- Ghee fried cashew nuts - garnishing
- Biryani colouring
Directions
- Soak the soya chunks in hot boiling water for 30 minutes till they are soft. (Some of the pieces will expand, so once it is soft, cut into two).
- Heat ghee in a wok and add cumin seeds and cinnamon stick., 1tbsp ginger & garlic paste, onions and chillies.
- Then add the tomatoes and saute till soft and add in the carrots and peas.
- Add all the spice powders till no raw smell and add in the soya chunks and mix well with the masala.
- Add a good amount of salt then add in the drained basmati rice and mix well with all the ingredients.
- Transfer the mixture into a rice cooker and enough water to cook the biryani. Give a quick taste for salt.
- Once done, give it a good mix and garnish with coriander leaves and cashew nuts.
- If you find the colour light, add some biryani food colouring when the rice is cooked and mix before adding the garnishing.
