Southern Cold Pea Salad
First ate this at a party. Good for pot lucks, picnics or parties. Great warm weather side dish. Ingredients
- 1 (15-ounce) can Peas; very young early
- 1/4 cup chopped Onions
- 2 Eggs; boiled and diced
- 2 to 3 T. Mayonnaise
- 1/8 t. Salt
- 1/8 t. Ground pepper
Directions
- Drain peas.
- Place drained peas in a medium bowl.
- Add onions, eggs, and mayonnaise.
- Season to taste with salt and pepper.
- Mix.
- Cover and refrigerate for 1 hour before serving.
- Options: Add mild cheddar cheese. Or add bacon crumbles.
