Southern Cold Pea Salad

First ate this at a party. Good for pot lucks, picnics or parties. Great warm weather side dish.

Goes Well With: corn bread muffins, baked chicken, pork chops

Ingredients

  • 1 (15-ounce) can Peas; very young early
  • 1/4 cup chopped Onions
  • 2 Eggs; boiled and diced
  • 2 to 3 T. Mayonnaise
  • 1/8 t. Salt
  • 1/8 t. Ground pepper

Directions

  1. Drain peas.
  2. Place drained peas in a medium bowl.
  3. Add onions, eggs, and mayonnaise.
  4. Season to taste with salt and pepper.
  5. Mix.
  6. Cover and refrigerate for 1 hour before serving.
  7. Options: Add mild cheddar cheese. Or add bacon crumbles.
