  • southeast white bean stew

    Ingredients

    • 10 lbs boiled white beans drained
    • 1 cup vegetable oil
    • 2 oz chopped onions
    • 2 oz small diced red peppers
    • 10 oz minced jalapenos
    • 5 oz minced garlic
    • 2 cups sherry vinegar
    • 2 oz peeled, seeded, and chopped tomatoes
    • 1 oz chopped cilantro
    • 2 tsp kosher salt
    • 2 tsp ground black pepper

    Directions

    1. Puree halt of the cooked beans and combine the pureed beans with the whole beans.
    2. heat the oil in a saucepan over a medium-high heat. Add te onions, peppers, jalapenos and garlic. Saute until the onions are translucent, 5 to 6 minutes.
    3. Add the vinegar and tomatoes and continue to saute until they are heated through about 10 minutes.
    4. Add the vinegar and tomaotes and continue to saute until very hot 2 to 3 minutes.
    5. Stir in the cilantro. Taste and then season with salt and pepper.
    6. Serve immediately or hold hot for serve.
