  • South Of The Border Chicken Bake

    Ingredients

    • 1 c. lowfat sour cream
    • 1/2 c. ricotta cheese or possibly creamed cottage cheese
    • 1 pkt cream cheese (1 ounce.) softened (1 to 3)
    • 3 c. coarsely minced cooked chicken (about 3 boneless/skinless breasts)
    • 3 c. cooked rice
    • 1 1/2 c. shredded monterey jack cheese
    • 1 can cream of chicken soup (10 3/4 ounce.)
    • 1 can minced green chilies (4 ounce.) liquid removed
    • 2 x tomatoes coarsely minced
    • 1/2 c. pitted black olives liquid removed
    • 1/2 tsp salt
    • 1/4 tsp garlic pwdr
    • 1 c. coarsely crushed corn (or possibly tortilla) chips

    Directions

    1. Blend together lowfat sour cream, ricotta cheese and cream cheese till smooth. Add in remaining ingredients, except corn chips, to cheese mix. Pour into ungreased shallow 3 quart. baking dish. Sprinkle with corn chips. Bake in preheated 350 degree oven for 25 to 30 min.
    2. Makes 8-10 servings.
