  • Sourdough Whole Wheat Naan

    Ingredients

    • 1 cup unfed sourdough starter (straight from the fridge)
    • 1/2 cup warm milk (2%)
    • 1/4 cup nonfat Greek yogurt
    • 1 t. baking powder
    • 2 cups whole wheat flour
    • pinch salt
    • melted butter
    • garlic herb seasoning (or your favorite herbs/spices)

    Sourdough Whole Wheat Naan

    This month for the Sourdough Challenge, our challenge was to use our sourdough starter to make flat breads. Such as tortillas, naan, or pita bread. I had never made flat bread before, so I was excited to see how easy or difficult it was going to be. I'm still wondering why I waited so long to try to make flat breads! It was really easy and tasted delicious! I decided to make the naan because...I have to be honest, I forgot to take my starter out and this recipe called for an unfed starter straight from the fridge! The naan turned out wonderful and had a nice tang. I made this for a late dinner and I really enjoyed it. Next I am going to try tortillas!

    Sourdough Whole Wheat Naan

    In medium bowl, whisk together starter, warm milk and yogurt. Stir until smooth.

    Add baking powder, whole wheat flour and pinch of salt. Mix just until moistened.

    Cover with a damp cloth and set in a warm place and let rest for 2-3 hours. (dough will not double in size like regular bread dough)

    Once the dough has rested, transfer to a lightly floured surface. Knead until smooth for a minute or two, adding only enough flour to keep the dough from sticking to your hands.

    Preheat a heavy skillet over medium high heat. Divide dough in 8 pieces. Roll each piece out to about 1/4 inch thickness. Brush dough with water and place it water side down in skillet. Cover and cook for about 1 minute until the dough bubbles and releases easily from the skillet. Flip, cover, and cook for an additional 30 seconds more. Transfer to a cooling rack and repeat with remaining dough.

    When ready to serve, brush with butter and herbs, toast.
