This is a quick and good banana bread recipe. The sour cream keeps it extra moist.

    Ingredients

    • 1/2 c margarine
    • 1 1/4 cups sugar
    • 2 cups flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 2 eggs
    • 1 teaspoon vanilla
    • 2 ripe bananas, mashed well
    • 1 cup sour cream
    • 1 cup walnuts, chopped (optional)

    Directions

    1. Preheat oven to 350 degrees.
    2. Sift together flour, baking powder, and baking soda and set aside.
    3. Cream together margarine and sugar.
    4. Add eggs, one at a time, beating well after each addition.
    5. Add bananas and mix well.
    6. Add vanilla and sour cream and mix well again.
    7. Stir in the flour mixture and the nuts.
    8. Pour into a greased 5"x9" loaf pan.
    9. Bake for 1 hour (or until a toothpick inserted near the center comes out clean).
