Soft Polenta With Olives And Feta
Ingredients
- 1/4 c. Greek olives, minced
- 1 tsp Extra virgin olive oil
- 1/4 c. Feta cheese,grated
- 2 Tbsp. Parmesan cheese grated
- 1 c. Garlic, mashed
- 1 Tbsp. Lemon juice,fresh
- 1 x Just made recipe for soft polenta
- Omitting the gorganzola cheese
Directions
- Stir the olives, oil, feta, Parmesan, garlic and lemon into the warm polenta. Serve hot in shallow bowls, accompanied by a salad of interesting greens. Sauteed dark leafies like kale and chard are also a tasty side dish for the polenta.
