Grilled New Potatoes With Olives And Garlic Sauce
Ingredients
- 1 med red potato
- 1 c. cubed day-old bread, (White-crusty)
- 1/2 c. blanched almonds
- 4 x garlic, cloves, minced
- 3 Tbsp. fresh lemon, juice
- 1 Tbsp. red wine vinegar
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/2 c. extra virgin olive oil Grilled New Potatoes With Olives
- 24 sm red new potato
- 1/4 c. extra virgin olive oil
- 2 Tbsp. extra virgin olive oil coarse salt
- 24 x kalamata olives
- 3 Tbsp. flat-leaf parsley
Directions
- Place the potato in boiling water and cook for 20 min.
- Peel and chop the potato and place in a food processor.
- Add in bread, almonds, garlic, lemon juice, vinegar, salt, pepper and 1/4 c. water. Process till smooth.
- Gradually add in the oil and adjust seasoning. Let rest.
- Grilled New Potatoes With Olives:Parboil the small potatoes for 10 min. Drain the potatoes.
- Skewer the potatoes and brush with oil. Grill till potatoes are crisp, about 10 min.
- Serve with garlic sauce.
