  • Grilled New Potatoes With Olives And Garlic Sauce

    Ingredients

    • 1 med red potato
    • 1 c. cubed day-old bread, (White-crusty)
    • 1/2 c. blanched almonds
    • 4 x garlic, cloves, minced
    • 3 Tbsp. fresh lemon, juice
    • 1 Tbsp. red wine vinegar
    • 3/4 tsp salt
    • 1/2 tsp black pepper
    • 1/2 c. extra virgin olive oil Grilled New Potatoes With Olives
    • 24 sm red new potato
    • 1/4 c. extra virgin olive oil
    • 2 Tbsp. extra virgin olive oil coarse salt
    • 24 x kalamata olives
    • 3 Tbsp. flat-leaf parsley

    Directions

    1. Place the potato in boiling water and cook for 20 min.
    2. Peel and chop the potato and place in a food processor.
    3. Add in bread, almonds, garlic, lemon juice, vinegar, salt, pepper and 1/4 c. water. Process till smooth.
    4. Gradually add in the oil and adjust seasoning. Let rest.
    5. Grilled New Potatoes With Olives:Parboil the small potatoes for 10 min. Drain the potatoes.
    6. Skewer the potatoes and brush with oil. Grill till potatoes are crisp, about 10 min.
    7. Serve with garlic sauce.
