Snowy Mashed Potatoes
Ingredients
- 8 lg. potatoes, peeled
- 1 c. lowfat sour cream
- 1 (8 ounce.) pkg. cream cheese
- Salt and pepper to taste
- 1/4 c. chives
- 2 tbsp. butter
- Paprika
- 1 sm. garlic clove, cut up very small
Directions
- Boil and mash the potatoes. Add in the lowfat sour cream, cream cheese, salt, pepper, and garlic. Beat with an electric mixer till creamy and smooth. Stir in chives. Pour into greased baking dish. Dot with bits of butter and sprinkle with paprika. Bake at 350 degrees for 1/2 hour.
