  • Smoked Sausage and Potato Bake

    This recipe is easy to put together. Put all ingredients in a deep dish baking pan, cover and bake. I add vegetables in season, and frozen vegetables during the winter months. The first time I made this recipe, both my sons walked in and commented on the aroma in the house. They call this dish the "German Casserole".

    Ingredients

    • 2 packages smoked sausage or kiebasa cut into 1/4ths
    • 3 to 4 large potatoes cut into 1/8ths
    • 1 large onion cut into 1/8ths
    • 1 package fresh or frozen green beans, carrots or both
    • Dash of kosher salt
    • Dash of gound black pepper
    • 2-3 tbls. extra virgin olive oil

    Directions

    1. Place all ingredients into a large deep dish baking pan
    2. Toss until coated
    3. Cover tightly with 2-3 pieces of aluminum foil
    4. Bake at 375 degrees for 90 minutes
