  • Smoked Pork Chops

    • 4 thick cut pork chops
    • 1 Tbsp olive oil
    • 1/2 Tbsp paprika
    • 1/2 Tbsp black pepper
    • 1/2 Tbsp sugar
    • 1/2 Tbsp garlic powder
    • 1/2 Tbsp onion powder
    • 1 tsp dried thyme
    • 1 tsp dried oregano
    • 1 tsp salt
    • 1/4 tsp cayenne

    Jump to Recipe Smoked Pork chops – these smoky, juicy, tender and delicious pork chops are so easy to make you can throw them on the smoker any night of the week! Pork chops are one of my favorite cuts of meat to have in the freezer and make just about any night of the week. I feel like they are very under used by a lot of people though. And I think that simply comes down to not properly cooking them. Pork chops should be juicy, tender and delicious. Not dry and tough. About 10 years ago the FDA changed the cooking temperature recommendations on pork, and it makes ALL the different in taste. So following that, along with making them in various different ways, is a great way to get a lean, affordable protein into your diet! Seriously, we eat a lot of Pork Recipes in this house. And pork chops make a very frequent appearance in things like Smothered Pork Chops, Baked Pork Chops, Grilled Pork Chops or even Air Fryer Pork Chops. As soon as the weather gets nice I am all about using the grill or the smoker to cook everything I can. These Smoked Pork Chops will quickly become a favorite. They are so easy to make, and take a fraction of the amount of time, a lot of smoking recipes take. This takes just over and hour, and you can use whatever spice blend you want to really change up the flavor each time. Bone-In or Boneless Pork Chops Both bone-in and boneless pork chops come from the same part of the pig. The only real difference is one has a bone, one doesn’t. So you aren’t getting a benefit of a more tender cut of meat or other differences when you pick one over the other. Personally I think they are both great options and work perfectly with this recipe. The method of cooking pork chops on the smoker is low and slow. So there is plenty of time to impart the smoky flavor and make them delicious. Really, just pick what your enjoy or what is on sale and they will be delicious pork chops no matter what! How Do You Make Smoked Pork Chops Drizzle the pork chops with a little bit of olive oil and brush all over the pork chop. Sprinkle on whatever rub or spice blend you want. You can use rub listed in the recipe or The Best Dry Rub is great for a more barbecue flavor. Let the pork chops sit at room temperature while you preheat the smoker to 225º F. Place the pork chops on the smoker and let them cook for 60-90 minutes, until a meat thermometer reads 145º F. Remove from the smoker and let them rest for 5 minutes before serving. How Long Does It Take To Smoke Pork Chops Low and slow is the name of the game when smoking pork chops, so you have enough time to really get that smoke flavor in the meat. At 225º F, pork chops cook for 60-90 minutes. It really depends on the size of your pork chops how long they will take to cook. For the best results look for pork chops that are at least 1-inch thick. I like to try to get closer to 1.5-inches thick, so there is plenty of meat to take in the flavor of the wood chips. Which Wood Is Best For Smoking Pork You want to use something sweet and mild to really bring out the flavor of the pork. Apple, Cherry, Maple or even Pecan are all great choices. They will not over power the pork chops with flavor, but will give them a sweet smoky flavor that works perfectly with the pork. When Are Pork Chops Done The best way to know when meat is done is to use a good thermometer. It should take 60-90 minutes at 225º, but if your pork chops are thinner or super thick this time will change. The internal temperature of the meat should be 145ºF. Then you know they are perfectly cooked and you can remove them from the smoker. It is best to use a good instant probe thermometer. I really like the Thermapen from Thermoworks.
