Smashed Red Potatoes
Nice change from Idaho mashed potatoes. Serve with Pork Cutlets Diane Ingredients
- 1 pound red potatoes
- 3/4 cup buttermilk, room temperature
- 1 T unsalted butter
- 2 T chopped, fresh parsley
- 1 T chopped, fresh chives
- salt and pepper to taste
Directions
- Boil potatoes in salted water for 20 minutes with skin on, until tender.
- Drain, then return to the pot and stir over low heat for 1 minute to evaporate excess moisture.
- Coarsely crush, ' smash' , the potatoes with a potatoe masher, then add the buttermilk and butter.
- Off heat, stir in the herbs, salt and pepper.
- NOTE:
- If you don't have any buttermilk...make your own using a teaspoon of vinegar in regular milk.
