Roasted Red Potatoes & Bacon~Cheese Baked Casserole
Fantastic side dish to any main entrée. Ingredients
- 5 pounds Red Potatoes
- 6 Slices Crispy Cooked Bacon
- 1 cup Sharp Cheddar Cheese shredded
- 1/2 cup low sodium vegetable stock/broth
Directions
- Pre Heat Oven 425 F
- Peeled and cut potatoes into large cubes add into a mixing bowl, add vegetable stock, cut pieces of crispy cooked bacon, stir gently
- Transfer to a non stick baking casserole dish
- Add cheese and gently stir
- Place into the hot oven and bake 20 minutes or until golden brown and potatoes are tender when pierced
