Slow Poke Jambalaya
Ingredients
- 1 pepper red or green seeded and chopped
- 1 onion (I omit)
- 1 can diced tomatoes including juice
- 1 cup chopped celery (I omit)
- 1 clove garlic minced
- 2 Tbl parsley
- 2 tsp thyme
- 2 tsp oregano
- 1/8 tsp cayenne pepper
- 1/2 tsp salt (I omit)
- 2 cups msg free chicken broth
- 1 pkg italian sausage chopped
- 3 boneless chicken breasts, chopped
- 4 cups cooked brown rice
- 1/2 lb cooked shelled shrimp halved lengthwise
Directions
- In slow-cooker combine all ingredients except shrimp and rice. Cover and cook on low 9-10 hours. Turn slow-cooker on high add cooked shrimp and cooked rice. Cover and cook on high 20-30 minutes.
