  • Slow Poke Jambalaya

    Ingredients

    • 1 pepper red or green seeded and chopped
    • 1 onion (I omit)
    • 1 can diced tomatoes including juice
    • 1 cup chopped celery (I omit)
    • 1 clove garlic minced
    • 2 Tbl parsley
    • 2 tsp thyme
    • 2 tsp oregano
    • 1/8 tsp cayenne pepper
    • 1/2 tsp salt (I omit)
    • 2 cups msg free chicken broth
    • 1 pkg italian sausage chopped
    • 3 boneless chicken breasts, chopped
    • 4 cups cooked brown rice
    • 1/2 lb cooked shelled shrimp halved lengthwise

    Directions

    1. In slow-cooker combine all ingredients except shrimp and rice. Cover and cook on low 9-10 hours. Turn slow-cooker on high add cooked shrimp and cooked rice. Cover and cook on high 20-30 minutes.
