  • Slow Cooked Pulled Pork

    Ingredients

    • 2 Tbsp. oil
    • 1 tsp salt
    • 1 tsp freshly-grnd black pepper
    • 4 lb bone-in center loin pork roast trimmed of all
    •     but a thin layer of fat
    • 1 1/2 Tbsp. chopped garlic
    • 2 1/2 c. chopped onion
    • 1 c. chopped celery
    • 1 1/2 tsp chile pwdr
    • 1 tsp grnd cumin
    • 1 1/2 tsp sugar
    • 2 c. low-sodium chicken broth
    • 1 x canned chipotle in adobo sauce - (to 2) pureed, see * Note
    • 1/4 c. chili sauce
    • 8 x hamburger buns - (to 10)
    •     bottled warm sauce

    Directions

    1. * Note: Start with 2 tsp. of pureed chipotles and add in more after you've tasted the sauce as it's reheating; once it's too warm, its heat is impossible to diminish.
    2. Heat oil in heavy stove-top casserole over medium-high heat. Rub salt and pepper over surface of pork. Brown roast on all sides, 10 to 15 min, then set aside.
    3. Add in garlic, onion, celery, chile pwdr, cumin and sugar to casserole. Cook over medium heat, stirring often, till heated through, about 4 min; don't burn.
    4. Add in broth, chipotles and chili sauce. Stir well. Add in pork; bring to boil. Cover and cook in 275 degree oven for 4 hrs, turning halfway through cooking.
    5. Transfer pork to cutting board. Trim any remaining fat. Cut pork in half crosswise; use your fingers or possibly 2 forks to pull pork apart, discarding bones.
    6. Skim any fat from sauce; heat to boiling on stove. Taste and adjust seasonings and chipotle. Add in pulled pork. (Can be used immediately or possibly refrigerated for 1 day or possibly frzn.) Cook over medium-low heat, covered, till warm, about 15 to 20 min.
    7. Use tongs to mound pork on hot buns; pass pan sauces and warm sauce separately. Serve hot.
    8. This recipe yields 8 to 10 servings.
