Skillet fruitcake

- 300g fruit, fresh (seasonal fruit) or canned
- 2 tbs butter
- 1 tbs sugar
- 100g flour.
- 60g semolina
- 100g sugar
- 7g dried yeast
- 2 eggs
- 100ml water
- 2 tbs icing sugar
Directions
- Slice fresh fruit however you desire.
- Melt butter in a 23cm diameter pan, add the fruit and sprinkle with a spoonful of sugar. Cook until tender. (If you use.canned fruit, cooking is not necessary).
- Meanwhile, combine flour, semolina, sugar and yeast in a separate bowl.
- Add eggs, mix and combine.
- Gradually add water and mix until a semi liquid and smooth batter is obtained..
- Pour evenly the batter over the fruit in a pan. Cook covered over medium heat about 10 minutes.
- When the cake is puffed and looks done, turn it out with the aid of a plate (like a tortilla).
- Return the cake into the pan, uncooked side to the bottom. Sprinkle with 1 tablespoon icing sugar, cover and cook over medium heat additional 10-15mnutes.
- Check for doneness with a toothpick (if it is dry and clean, remove the cake from the heat).
- Let it cool and then turn out onto a plate, sprinkle with icing sugar.
