    Ingredients

    • 300g fruit, fresh (seasonal fruit) or canned
    • 2 tbs butter
    • 1 tbs sugar
    • 100g flour.
    • 60g semolina
    • 100g sugar
    • 7g dried yeast
    • 2 eggs
    • 100ml water
    • 2 tbs icing sugar

    Directions

    1. Slice fresh fruit however you desire.
    2. Melt butter in a 23cm diameter pan, add the fruit and sprinkle with a spoonful of sugar. Cook until tender. (If you use.canned fruit, cooking is not necessary).
    3. Meanwhile, combine flour, semolina, sugar and yeast in a separate bowl.
    4. Add eggs, mix and combine.
    5. Gradually add water and mix until a semi liquid and smooth batter is obtained..
    6. Pour evenly the batter over the fruit in a pan. Cook covered over medium heat about 10 minutes.
    7. When the cake is puffed and looks done, turn it out with the aid of a plate (like a tortilla).
    8. Return the cake into the pan, uncooked side to the bottom. Sprinkle with 1 tablespoon icing sugar, cover and cook over medium heat additional 10-15mnutes.
    9. Check for doneness with a toothpick (if it is dry and clean, remove the cake from the heat).
    10. Let it cool and then turn out onto a plate, sprinkle with icing sugar.
