    This is a lovely blend of good and evil. Lots of veggies but also pasta, scallops, and bacon. The slight addition of balsamic to the gouda adds another depth of flavor to an otherwise creamy, rich sauce. Play with the measurements and veggies if you like since everyone has different taste preferences. Bon apetito.

    Ingredients

    • 1 lb spaghetti (or pasta of your own choosing.)
    • 1 tbs. olive oil
    • 12 oz. scallops
    • 6 oz. bacon
    • 1 cup brocolli florets
    • 1 yellow pepper (diced)
    • 1 green pepper (diced)
    • 1/2 cup halved cherry tomatoes
    • 1 parsnip, thinly julienned
    • 2 green onions, however you like them.
    • Sauce: 2 cups cream
    • 8 oz. gouda cheese
    • 1 tsp. balsalmic vinegar

    Directions

    1. Boil 6 qrts salted water . When reaches a rolling boil add pasta. Add brocolli during last two min. of cooking. Cook to al dente. Drain together.
    2. While pasta is cooking:
    3. Heat cream on med low heat, stirring occasionally till hot. Add gouda cheese to cream (cubed or sliced) and whisk in till melted.
    4. Cook bacon in large skillet on medium. Add scallops to pan and saute till golden brown on each side.
    5. Saute the parsnip, yellow pepper, and green pepper in the olive oil. Add pasta to pan (med/low heat.)
    6. Add balsalmic to sauce. Whisk in.Toss pasta with sauce.
    7. Add the bacon and scallops. Toss again.
    8. Plate and add tomato halves and green onion for garnish.
