Sinigang na Mamali (Big Head Fish)
A native sour soup enjoyed by many pinoys. Ingredients
- 1 kilo Mamali sliced
- 1 medium-sized unripe green mango
- 1 cup stringbeans, cut into 3-inch long pieces
- 1 peeled and sliced radish (labanos)
- 2 cups kangkong leaves
- 1 cup kangkong stalks
- 1 sliced large onion
- Salt or fish sauce (patis)
- 3 med ripe tomatoes
- 5 cups water
Directions
- Bring water into a boil.
- Add tomatoes, onions, labanos, green mango into the boiling water and let it go tender.
- Add the string beans and the kang kong stalks. Simmer for a few minutes.
- Add the fish meat and let it simmer for 5-8 minutes.
- Add fish sauce to taste.
- Drop the finger chilies and let it boil more.
- Adjust the sourness if needed.
- Serve.
