  • Simple Sautéed Spinach; meanderings

    Ingredients

    • 6oz (180gr) fresh spinach
    • 1 tbs fresh, snipped chives
    • 1 tsp olive oil
    • 2 tsp good olive oil
    • 1 tbs lemon juice
    • salt – sea salt is nice, and pepper

    More spinach….

    When I lived in the US it seemed the only acceptable way to eat spinach was with bacon…. Lots and lots of bacon.

    We like spinach with bacon.

    We also like it with just a sprinkle of fresh lemon juice.

    This is quickly done and best if done at the last minute.

    A sprinkling of lemon juice and sea salt is all that’s needed to let the spinach shine. The leaves should be barely wilted.

    Simple Sautéed Spinach

    Total time: 10 minutes

    Instructions:

    Wash and stem spinach if needed. Drain in a colander. If you don’t feel you need to wash it – do it anyway. We want a little bit of water on the leaves – what ever is left after draining well

    Cut big spinach leaves into strips.

    Heat 1 tsp oil over medium high heat in large nonstick skillet.

    Add spinach and herbs. Quickly stir-fry, 1 – 2 minutes. The spinach should just start to wilt.

    Remove, sprinkle with lemon juice, good olive oil, salt and serve.

    Now that we are done (mostly) with our house I thought I would meander down memory lane and have a look at what we’ve accomplished.

    Going back to the very beginning, here are a few photos we took before we bought it compared to current photos.

    This is the front of the house.

    We left the big tree in the middle but took down the trees on the left side of the photo opening up the lawn and exposing the hedge.

    The puppies did their best to destroy the hedge during their first summer but we managed to save it.

    This is the back of the house – with the old Juliette balcony and uncut field.

    This is curent…. A bit of paint does wonders.

    We love our new balcony, perfect place for dinner on warm summer evenings.

    This was how the first floor looked. It had been used for grain storage and drying tobacco.

    And, apparently, a play area for the grandchildren – right in all the insulation.

    It now has 4 bedrooms and 2 bathrooms.

    The red arrow points to one of the windows. At the time there were only shutters in the openings, no actual windows on this floor.

    For me this photo is really amazing. This is the field on the south side of the house.

    This is what it looks like today.

    I can’t believe how much those little trees have grown in 6 years.

    On the right side of the little woods, tucked away, are 4 plum trees.

    So, for the foreseeable future join my on my Monday Meanderings….
