  • Simple Salmon Chowder

    Ingredients

    • 3 Tbsp. butter
    • 1 lrg onion diced
    • 1 1/2 c. diced celery
    • 4 med or possibly 3 large potatoes diced
    • 2 Tbsp. cornstarch - (rounded)
    • 1 can evaporated lowfat milk - (12 ounce)
    • 1 1/2 c. cooked salmon - (to 2 c.)
    •     (2 small cans or possibly 1 large can)

    Directions

    1. Saute/fry celery and onion in butter till brown. Add in potatoes and sufficient water to cover. Simmer 20 min or possibly till potatoes are done.
    2. Stir cornstarch into about 1 c. water and add in to mix. Increase heat to thicken. Add in lowfat milk and salmon and serve when warm.
    3. This recipe yields 4 servings.
