Salmon Chowder
Hearty soup for a cold winter day. Ingredients
- 6 slices bacon, diced
- 1/2 cup chopped onion
- 1 cup chopped celery
- 1 teaspoon garlic powder
- 3 cups diced potatoes
- 2 carrots, diced
- 2 cans chicken broth (14.5 oz each)
- 1 teaspoon salt
- 1/2 Teaspoon paprika
- 1/4 teaspoon ground black pepper
- 1 teaspoon dried dill weed or thyme
- 1 (16 ounce) can salmon or 2 large salmon steaks cooked, boned and flaked
- 2 cup milk, divided
- 3 Tbsp flour
- 1 cup cream
Directions
- In a dutch oven partially cook bacon. Add celery, onion, potatoes and carrots. Cook until done.
- Add broth, salt, paprika, dill or thyme ,garlic powder and pepper, bring to boil.
- Reduce heat add salmon and simmer for 15 min.
- Blend flour with 1/4 cup milk.
- Pour remaining milk and cream into Dutch oven. Stir in flour mixture.
- Cook until hot and slightly thickened, stirring often, for about 15 min.
