    Shrimp Udon w Fish Cakes & Poached Egg

    Udon, (or udong as most Koreans say) is a great noodle dish that can be enjoyed morning, day, or night. It is a popular dish in both Korea and Japan (where it originated), and you can find this tasty, instant version in most Asian grocers. When we get tired of the usual ramen variety, we like to change things up with udon noodles because of its silky texture and flavorful broth. To make it a full meal we like to add on extra toppings like fish cakes, shrimp, mussels, seaweed, egg, and scallions. And what is especially great about this dish is that you can create a satisfying meal within minutes (same as making instant ramen noodles) and not worry about all the time and hassle of prepping.

    Ingredients

    • •2 package shrimp flavored udon
    • •1/2 cup fish cake, thinly sliced flat
    • •1/2 tbsp soy sauce
    • •2 eggs, poached
    • •scallion, finely cut
    • •1 tsp minced garlic (or garlic powder)
    • •gim (dried seaweed), cut into strips (optional)

    Directions

    1. 1. Bring large pot of water to a boil and add the sauce packets, soy sauce, minced garlic, and shrimp. Boil for a few minutes before adding the udon noodles.
    2. 2. Add the udon noodles and fish cakes. Cook for about 5 minutes or until the noodles separate. Then add the eggs carefully so they don't separate. Cook for another 5 minutes or until egg whites have solidified.
    3. 3. Transfer to soup bowl and garnish with scallion slices and gim strips.
