  • Shrimp Pad Thai

    Ingredients

    • 3 Tbsp. Peanut oil
    • 2 x Chopped garlic cloves
    • 2 x Seeded and chopped red chili
    • 1/2 lb Peeled and de-veined shrimp
    • 3 x Minced scallions
    • 1 c. Bean sprouts
    • 2 x Beaten Large eggs
    • 2 Tbsp. Tamarind sauce
    • 2 Tbsp. Thai fish sauce
    • 1 Tbsp. Sugar
    • 1/2 lb Softened rice noodles
    • 2 Tbsp. Minced peanuts
    • 2 Tbsp. Minced cilantro
    •     Lime wedges

    Directions

    1. Directions: Soak the rice noodles in water to soften and drain. In a large wok, heat the peanut oil till warm. Add in the garlic, chili, shrimp, scallions, and bean sprouts. Toss well while cooking for 2 min. Move mix to the sides and add in the beaten Large eggs. Quickly scramble and toss with the mix. Add in the Tamarind sauce, fish sauce, and sugar. Mix well.
    2. Add in the rice noodles, peanuts, and cilantro to the wok and toss to combine.
    3. Serve with lime wedges.
