Shrimp Pad Thai
Ingredients
- 3 Tbsp. Peanut oil
- 2 x Chopped garlic cloves
- 2 x Seeded and chopped red chili
- 1/2 lb Peeled and de-veined shrimp
- 3 x Minced scallions
- 1 c. Bean sprouts
- 2 x Beaten Large eggs
- 2 Tbsp. Tamarind sauce
- 2 Tbsp. Thai fish sauce
- 1 Tbsp. Sugar
- 1/2 lb Softened rice noodles
- 2 Tbsp. Minced peanuts
- 2 Tbsp. Minced cilantro
- Lime wedges
Directions
- Directions: Soak the rice noodles in water to soften and drain. In a large wok, heat the peanut oil till warm. Add in the garlic, chili, shrimp, scallions, and bean sprouts. Toss well while cooking for 2 min. Move mix to the sides and add in the beaten Large eggs. Quickly scramble and toss with the mix. Add in the Tamarind sauce, fish sauce, and sugar. Mix well.
- Add in the rice noodles, peanuts, and cilantro to the wok and toss to combine.
- Serve with lime wedges.
