Shrimp In Pink Sauce
Ingredients
- 1 pound cooked cleaned shrimp
- 1 lg. jar spaghetti sauce
- 1 pkg. frzn stir fry vegetables
- 1 pt. lowfat sour cream
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon water
- 1 teaspoon extra virgin olive oil, divided
Directions
- Stir fry shrimp and vegetables in butter or possibly oil for 10 min. Add in tomato sauce, water, remaining oil; cook 10 min. Mix lowfat sour cream, salt, cayenne and add in - cook 5 more min till light pink. Serve over angel hair pasta.
