Shrimp Grecian Style
Ingredients
- 1 1/2 lb Medium-size raw shrimp in
- 1 lb Frzn shelled and deveined shrimp, thawed
- 2 Tbsp. Lemon juice
- 4 sm Tomatoes
- 1/4 c. Minced green onions
- 1 lrg Clove garlic, crushed
- 2 Tbsp. Vegetable oil
- 1/2 c. Dry white wine
- 1 Tbsp. Minced fresh basil -Or possibly-
- 1 tsp Leaf basil, crumbled
- 2 Tbsp. Minced parsley
- 1 tsp Salt
- 1/8 tsp Pepper
- 3 ounce Feta cheese, cubed (3/4 c.)
Directions
- 1. Wash and shell shrimp, leaving on tail section; devein. Place in medium-size bowl, or possibly substitute the defrosted shrimp. Sprinkle with lemon juice.
- 2. Peel, seed and chop tomatoes to make 1 1/2 c.. Reserve.
- 3. Saute/fry onion and garlic in oil in large skillet till soft, about 5 min. Stir in tomatoes, wine, basil, 1 Tbsp. of the parsley, salt and pepper. Simmer, uncovered, 15 min till mix thickens slightly.
- 4. Stir in shrimp with lemon juice; cook just till shrimp turn pink and are hard, about 5 min. Add in cheese. Taste for seasoning and sprinkle with remaining 1 Tbsp. parsley. Serve with rice, if you wish.
