Shrimp & Black Bean Wrap

- 2 Flour Tortillas (8")
- 4 ounces Medium Shrimp
- 1/2 cup cooked Black Beans
- 1 Diced Roma Tomato
- 2 tablespoons sour cream
- 1/2 lemon juice only
Directions
- Cook in salted boiling water the medium shrimp, 3 minutes, drain
- In a mixing bowl add cooked shrimp, black beans, diced tomatoes and gently stir
- Lay Flour Tortillas on a clean work surface, in a ramekin add sour cream and lemon juice stir to mix, coat the interior surface of tortilla with mixture leaving a 1/2" border, add shrimp/black bean mixture, tomatoes, roll tortillas up, cut in half and enjoy!
