Shrimp & Avocado Soft Taco's
Seafood Lovers and Soft Taco's Lovers find each other! Ingredients
- 4 Flour (or corn) Tortillas (7")
- 8 ounces large shrimp (frozen pre-cooked is fine to use-thaw first)
- 1 Ripe Avocado (remove pit, cut into chunks)
- 1 cup Arugula (coarsely chopped
- one teaspoon Old Bay Seafood Seasoning
- one lime juice only
- 1/2 teaspoon black pepper
- 1/4 cup Sour cream
Directions
- In a small bowl add sour cream, black pepper and lime juice, stir well and refrigerate.
- In a pot of boiling salted water add one teaspoon Old Bay Seafood Seasoning add shrimp and cook 3-4 minutes, drain
- Warm tortillas in the microwave 20 seconds
- Lay tortillas flat on a clean work surface, add sour cream/lime spread to the interior surface of tortilla (leaving a 2" border around the perimeter), add chopped arugula, chunked avocado, shrimp to each taco, fold and eat!
