  • Shrimp And Pasta Caesar Salad

    Ingredients

    • 1 lb bow-tie shaped pasta (farfalle)
    • 1 lb pre-cooked large salad shrimp
    • 1 lrg romaine lettuce head
    • 15 x cherry tomatoes halved
    •     Croutons
    • 1 x garlic clove
    • 2 x canned anchovy fillets liquid removed
    • 2 Tbsp. fresh lemon juice
    • 2 Tbsp. extra virgin olive oil
    • 1/3 c. chicken broth
    • 2 tsp Dijon mustard
    • 1/2 tsp freshly-grnd black pepper
    • 1 tsp Worcestershire sauce
    • 2 Tbsp. grated Parmesan cheese

    Directions

    1. Cook pasta according to package directions. Drain and chill. Wash and tear lettuce into bite-size pcs. Toss together pasta, shrimp, lettuce and tomatoes. Sprinkle with dressing and toss to coat. Serve with Croutons.
    2. Caesar Dressing: Peel and mince garlic clove. Mash together garlic and anchovy fillets till smooth. Add in lemon juice, extra virgin olive oil, chicken broth, mustard, pepper, Worcestershire sauce, and Parmesan cheese to garlic mix and whisk till smooth. Sprinkle over salad and toss to coat.
