  • Shanghai Turkey Cutlets

    Ingredients

    • 2 cups, 2 Tbsp flour
    • 2 Tbsp paprika
    • 1 Tbsp ground black pepper
    • 12 lbs turkey cutlets (96 cutlets)
    • 2 lbs mushrooms- thinly sliced
    • 6 cups sherry
    • 1 1/2 cups brown sugar
    • 2 pints water
    • 2/3 cups reduced sodium soy sauce
    • 1/3 cups sesame seeds
    • 2 Tbsp ground ginger

    Directions

    1. Combine flour, paprika, and black pepper. Mix thoroughly.
    2. Dredge cutlets in flour mixture.
    3. Spray skillet with vegetable spray and brown 2 minutes. Turn and continue browning 3 minutes.
    4. Remove cutlets and arrange in 12x20x2 inch pan.
    5. Saute mushrooms in skillet 5 minutes. Top cutlets with mushrooms.
    6. Add remaining ingredients to skillet and bring to boil.
    7. Pour over cutlets.
    8. Cover tightly and bake 25 minutes at 300 F, until internal temperature of 160F is reached.
    9. Sauce will thicken upon standing.
