Seared Tuna Nicoise With Sweet Red Pepper Dressing
Ingredients
- 4 sm tomatoes on the vine possible
- 100 gm French beans
- 1 x red pepper quartered and seeded
- 4 x tuna steaks about 150g each
- 4 lrg new potatoes boiled and sliced
- 2 x Large eggs boiled for 5 min shelled and quartered
- 12 x black olives
- 4 Tbsp. tapenade
- 1 x salt and black pepper
- sweet red pepper dressing (qv) to serve
Directions
- Plunge the tomatoes into boiling water for 30 seconds then remove with a slotted spoon and plunge into cool water.
- Drain then remove skins.
- Cook beans for 3 min and plunge into cool water.
- Drain.
- Preheat the grill to high.
- Grill the peppers.
- Sear the tuna in a warm pan for 1 minute on each side (it should be pink in the centre).
- Arrange the tomatoes beans pepper slices potatoes Large eggs and olives on plates dot with the tapenade and place tuna steaks on top.
- Season then drizzle over the dressing.
- Serves 4
