    A great sear on the steaks depends on getting the pan very hotand not moving the meat too much while it's cooking....


    • 4(4 OUNCE } beef tenderloinsteaks {1inch} thick
    • 1/2tsp kosher salt.divided
    • 1/4tsp black pepper
    • 2 tblschopped fresh parsley
    • 1 tbls chopped fresh rosemary
    • 1tblschopped fresh thyme
    • 2 tbls good olive oil
    • 1 tbls grated lemon rind
    • 1tsp fresh lemon juice
    • 2 small garlic cloves minced


    1. Heat a large cast iron skillet over high heat,sprinkle steaks evenly with salt and pepper,Add steaks to pan;cook 3 min.on each side or until desired degree of doneness.Remove steaks from pan;,let stand 5 minutes.
    2. While steaks rest combine salt,parsley,and remaining ingredients serve over steaks 4 servings and 1/12 tsps gremolata per person
