    A GREAT SEAR ON THE STEAK S DEPENDS ON GETTING THE PAN VERY HOT AND NOT MOVING THE MEAT TOO MUCH WHILE IT IS COOKING.PAIR THIS UP WITH MY LOW FAT OVEN ROASTED POTATOES ,AND SOME FRESH SAUTEED ONIONS AND MUSHROOMS IN WHITE WINE .ENJOY A NICE GLASS OF RENE BARBIER WINE IT IS FUN AND STRAIGHT FORWARD AS YOUR MEAL .ENJOY

    Ingredients

    • 4 [4 OUNCE ] BEEF TENDERLOIN AT LEAST ONE INCH THICK
    • 1/2 TSP KOSHER SALT DIVIDED
    • 1/4 TSPFRESH BLACK PEPPER
    • GREMOLATA
    • 2 TBLS CHOPPED FRESH PARSLEY
    • 1 TBLS CHOPPED FRESH ROSEMARY
    • 1 TBLS CHOPPED FRESH THYME
    • 1 TBLS OLIVE 1 GARLIC CLOVE DICED
    • 1TBLS GRATED LEMON RIND \
    • 1TBLS LEMON JUICE
    • ROASTED POTATOES
    • 4 MEDIUM POTATOES PEELED AND SLICED
    • 2TBLSPGOOD OLIVE SALT AND PEPPER
    • SAUTEED MUSHROOMS AND ONIONS WITH WHITE WINE AND BUTTER

    Directions

    1. HEAT A LARGE GRILL PAN OR SKILLET
    2. SPRINKLE STEAKS WITH SALT AND PEPPER
    3. COOK3 MINUTES ON EACH SIDE OR TILL DESIRED DONENESS
    4. REMOVE TO PLATE KEEP WARM
    5. GREMOLATA
    6. COMBINE SALT AND PEPPER LEMON JUICE GARLIC AND HERBSAND LEMON RIND,ADD OLIVE OIL MIX WELL SERVE OVER STEAKS

    10. ADD ONIONS SAUTE TILL SOFT ADD 1/4 CUP OF WHITE WINE COOK TILL NICE AND THICK
    11. PUT OVEN ON 375 PUT 2 TBLS OLIVE OIL IN BAKING PAN
    12. COAT POTATOES WITH OIL AND SALT AND PEPPER
    13. AND ROAST TILL BROWN SERVE WITH STEAK
