Scottish blueberry pancakes
Traditional Scottish pancakes with a bit of a twist! Ingredients
- 125g self raising flour
- 1 tablespoon caster sugar
- 200ml soya milk
- 1 egg
- 2 tablespoons of butter
- 125g blueberries
Directions
- Mix the self raising flour and caster sugar together.
- Melt the butter in a pan.
- Beat the egg.
- Create a well in the middle of the dry ingredients, add in the butter, egg and mix.
- Add in the milk a little at a time until the mixture becomes smooth.
- Mix in the blueberries.
- Spoon some of the mixture into a frying pan, when it starts to bubble, turn the pancake over and cook on the other side.
