  • Scottish blueberry pancakes

    Traditional Scottish pancakes with a bit of a twist!

    Ingredients

    • 125g self raising flour
    • 1 tablespoon caster sugar
    • 200ml soya milk
    • 1 egg
    • 2 tablespoons of butter
    • 125g blueberries

    Directions

    1. Mix the self raising flour and caster sugar together.
    2. Melt the butter in a pan.
    3. Beat the egg.
    4. Create a well in the middle of the dry ingredients, add in the butter, egg and mix.
    5. Add in the milk a little at a time until the mixture becomes smooth.
    6. Mix in the blueberries.
    7. Spoon some of the mixture into a frying pan, when it starts to bubble, turn the pancake over and cook on the other side.
