  • Savory Cheese And Tomato Salad

    Ingredients

    • 1 pkt spinach souffle - (12 ounce)
    • 1 pkt cream cheese - (8 ounce) softened
    • 2 x logs goat cheese - (3.5 ounce ea)
    • 1 tsp coarsely-grnd black pepper
    • 1/4 tsp salt
    • 1 lrg egg
    • 1/4 c. water
    • 1/2 c. all-purpose flour
    • 2 c. Italian-seasoned breadcrumbs
    •     Vegetable oil as needed
    • 8 c. mixed salad greens
    • 1 c. oil-and-vinegar dressing
    • 2 lrg tomatoes thinly sliced

    Directions

    1. Thaw spinach souffle in microwave at MEDIUM (50% power) 6 to 7 min.
    2. Stir together spinach souffle and next 4 ingredients till well blended. Shape mix into 16 patties. Refrigerate8 hrs.
    3. Stir together egg and 1/4 c. water. Dredge patties in flour; dip in egg mix, and dredge in breadcrumbs.
    4. Pour oil to a depth of 1/2 inch into a large heavy skillet. Fry patties, a few at a time, in warm oil over medium-high heat 2 to 3 min on each side or possibly just till golden. Drain on paper towels.
    5. Toss salad greens with dressing. Place on individual salad plates; top with tomato slices and cheese patties.
    6. This recipe yields 8 servings.
