Sausage, Peppers, And Onions
Ingredients
- 1 lg. onion
- 3 lg. green bell peppers
- 3 tbsp. extra virgin olive oil
- Salt and freshly grnd black pepper to taste
- 1 pound warm Italian pork sausages
- 3/4 c. dry red wine
Directions
- Wash peppers; remove stem ends and seeds. Cut into large chunks; slice onions. Pour extra virgin olive oil into oven-proof, flame-proof baking dish. Saute/fry pepper chunks and onion slices in extra virgin olive oil till they begin to soften. Sprinkle with salt and pepper to taste. Remove peppers from dish; set aside. Brown sausage in same dish. Add in wine. Cover; bake in preheated 350 degree oven 40 min. Uncover; add in sauteed green peppers. Bake about 30 min longer. Serve at once in same baking dish.
