    Using Turkey or Italian sausage, fat-free cheddar cheese, eggs (or egg substitute), and reduced-fat crescent rolls, you can really keep the fat and calories down with this delicious breakfast pizza. Serve it for breakfast, or one of those fun breakfast-for-dinner nights with the family! Nutritional Value: 1 Slice - Calories 241, 10g Fat (2g sat. Fat), 24mg cholesterol (egg substit.), 744mg sodium, 22g carbs, 1g fiber, 16g protein.

    Ingredients

    • 2 Tubes (8oz) refrigerated reduced-fat crescent rolls
    • 1 - 1 & 1/2 lb Italian Turkey sausage links with casings removed
    • 1 & 3/4 cups of sliced fresh mushrooms
    • 1 & 1/2 cups of shredded hash brown potatoes
    • 1/2 teaspoon garlic salt
    • 1/2 teaspoon black pepper
    • 2 green onions, chopped
    • 1/4 cup finely chopped sweet red pepper
    • 1 cup shredded fat-free cheddar cheese
    • 4 eggs scrambled (or egg substitute equivalent)

    Directions

    1. Separate crescent dough into eight triangles (per tube); place on an ungreased 12-inch pizza pan with the points facing the center (forming a round pizza). Press onto the bottom and up the sides of the pan to form a crust; seal the perforations/joints. (I rolled the dough out of the tube and left it all connected to make a rectangular pizza.) Bake at 375 degrees for 8 minutes.
    2. Meanwhile, crumble sausage into a non-stick pan/skillet coated with cooking spray. Add mushrooms; cook and stir over medium heat until meat is no longer pink. Drain and set aside. In the same skillet, cook the potatoes, garlic salt and pepper over medium heat until browned.
    3. Sprinkle sausage mixture over baked crust. Layer with potatoes, onions, red pepper and cheese; pour egg substitute or scrambled eggs over the top. Bake for 10-12 minutes or until egg is set and cheese melted. (If using cooked scrambled eggs, cooking time will only be 3-5 minutes to melt the cheese.)
