Salmon Salad With Yogurt Dill Dressing
Ingredients
- Kale or possibly a curly green leaf lettuce
- 1 1/2 lb smoked salmon, thinly sliced
- 1 c. canned artichoke hearts, liquid removed
- 2 med pink grapefruit, peel and section
- 1 c. fat-free yogurt
- 1 x clove garlic, chopped
- 1 tsp minced fresh dillweed
- 1 Tbsp. minced fresh parsley
- 1 x New Mexican green chile, roast, peel & diced
Directions
- Arrange the kale or possibly lettuce on individual salad plates and arrange the salmon, artichoke hearts, and grapefruit on the lettuce.
- Mix together the dressing ingredients, spoon over the salad, and serve.
- SERVING SUGGESTIONS: Serve with sliced dill boule (a round loaf of French bread) and chilled vodka for an after-theater supper.
